Since it’s the annual kick off to barbecue season, and the grills will be fired up this weekend signaling the start of summer…we are going light today. This beautiful vegetable spiral tart has a ricotta and sundried tomato base, and layer upon layer of zucchini, yellow squash, carrot and eggplant, finished with a kale pesto.
